There was no doubt that a menu entitled 9 Dishes / 9 Ice Creams in Context at the Westin generic cialis kopen Palace Madrid was going to be of great interest to us on our recent trip to this lovely Spanish capital city.
There is no doubt that both chefs and home cooks are becoming more confident and innovative in their cooking, mixing tastes and ingredients previously unheard of. It was with great pleasure that we were invited to be a part of such an avant-garde menu at La Rotunda Restaurant at the Westin Palace Madrid.
Chef Fernando Sáenz has designed 9 dishes accompanied by 9 ice creams to be enjoyed and savoured in the grand dining room under the glassed dome.
This Spaniard is a master ice cream master of La Rioja who is making his mark on a haute cuisine.
At the customary time of 10.30pm we dutifully arrived, rather excited to be honest, to see what he had created.
This is where the fun began and we will show you our menu, dish by dish as they arrived. We hope you enjoy our gastronomic treat as much as we did, because it was one sensory and visual treat after another.

Wow, what an amazing experience. Looks and sounds delicious.
I love savoury ice cream, so it suited me so well.
Now this is some seriously creative art on a plate, especially the white prawns from Huelva with an icy sea water, chamomile and lemon dressing… amazing. Sending this post to the chefs I work with for some fun inspiration for special events we are putting on in the next few months. Cool post!
Definitely. We seemed to have eaten a lot of savoury ice cream pairings last year, and they work brilliantly. Send me photos from your chefs.
Wow! An ice cream degustation is something I can get on board with! Thanks for sharing 🙂
It was crazy starting it so late at night, but we did it.
What…ice-cream with the main dishes! Wow, this totally caught my attention. As an ice-cream fan, this is up my alley. Would love to have this experience. Thanks for sharing the fact that ice-cream goes way beyond dessert!
Ice Cream is actually even better with savoury dishes. Crazy but true.
Mmm…. it sounds delicious! I love Spanish beef and potatoes! I’m getting hungry now 🙂
The beef, potatoes and ice cream was amazing.
Gosh, so NOT what I was expecting. I do like savoury icecreams, but I’ve never seen such diversity! What an amazing tasting menu!
It was a totally unique concept and experience, and we do know we are spoiled.
Wow, what an interesting assortment. At first the concept of savoury ice-creams sounds weird, but I can totally see from your pictures how it might work. The idea of Almond and garlic cream soup with Palo cortado sherry ice cream sounds really intriguing and I would have loved to have tried it.
The Almond and garlic cream soup had one of the most unusual textures. I am yet to be able to describe it in words, because it was nothing that I have ever had before.
Savoury ice creams are definitely a new concept to me, but the pear flavour looks delicious!
2015 seemed to be the year that we had many savoury ice creams in many countries. The 1st was at the Mandarin Oriental in Paris. I love savoury ice creams, it works for me. I thought they would take off more and perhaps will in 2016.
Ice cream on everything! Now that’s what I’m talking about!
And it worked. Every single dish it was a pairing matched perfectly.
My eyebrows shot up so many times through this post – in sheer delight at the unusual combinations. 🙂 Delightful!
That’s wonderful Krista and our eyebrows shot up too as more and more dishes and more and more combinations kept appearing.
Some are these are odd. I am not sure if I would try it or not. Lol maybe if someone else ordered it.
Holly they all worked perfectly. The ice cream with the roast beed was amazing.
What an interesting combination of ingredients. Sometimes it’s better to not know exactly what you are eating under those circumstances so your taste buds won’t be swayed by your mind. The salt cod and pepper ice-cream sounded especially creative to me.
The cod and ice cream was really amazing. I am a fan of savoury ice cream but this convinced Gordon who was a little sceptical.
This looks like ice cream heaven! Love the photo of the chef at the Westin Palace, too!
Thanks and yes it was, though I was getting full with so many taste sensations. But managed to complete all 9 courses.
Well you had me at green pear and lemon thyme sorbet, and it sort of went er, uphill from there! What some taste sensations. Oh to be able to replicate a few. But I guess diversity and innovation … such is the beauty of travel to foreign climes.
I am going to trial some of these on friends, and hoping I can go close to replicating some of the flavours.
We both wrote about ice cream this week, but your ice cream experience looks like it was beyond anything I could imagine. We’ll be in Madrid in early December. Hmm. Your food photos are arresting, but your photo of the chef really “takes the cake”—as it were. 😉 Did you have to lay on the floor to get the shot?
Definitely go to the Westin Palace Madrid and have this amazing menu. I am short so whatever I photograph is looking up 🙂
That certainly was a gastronomic feast of ice cream. I’m not sure which I would pick to try first. Perhaps Chef Fernando Sáenz will assist me in my decision if I ever get to the Westin Palace Madrid.
Carole – they came out in order as decided by the chef, and it was a perfect sequence of dishes from start to finish.
Hi Paula,
Boy, you just simply outdone yourself with this one! What an unforgettable culinary experience — and leave it to the Spanish to come up with something so innovative and brave.
My favorite is the pork tenderloin. I think these savory sweet flavors must combine in a divine manner.
Lucky, lucky you!
Regards,
Josie
We were very lucky and it is so very innovative. I love the Spanish and their approach to lots of things.
Savory ice cream, sweet-and-savory combinations with ice cream, oh my goodness! This food experience is definitely one I would love to have…count me in, next time I’m in Madrid!
I love the pairing of savoury and sweet, it works so well together.
What?! Ice cream with EVERYTHING?! I am so there. The photos look incredible, but the descriptions signify one of the most innovative sets of flavor combinations I’ve ever encountered. I really would love to have this experience.
Yes, ice cream with everything. It was an amazing experience and the tastes worked so well together. Guernica ice cream was incredible plus the name was so right for Spain.
This isn’t just food – this is ART! Unbelievable! What an amazing experience – the white prawns in icy sea water gave me goosebumps 😉 Your photos are outstanding! What fun!
You are totally correct, it is art and the prawns were amazing. It totally worked.
Loved your photo of the Master Chef who projects a certain panache! I’d love to participate in the eating extravaganza and sample all 9 dishes with the accompanying ice creams. The beef tenderloin with its brandy butter ice cream really had my mouth watering!
It was a marathon effort that started at 10.30pm (Spanish dinner time) and ended when they were setting up for breakfast.
This looks amazing! I am a huge ice cream eater and I’m drooling just looking at these pictures.
I must say we loved each ad every course, though by the 5th course I was thinking I would never make it.
This is incredible! Never heard of something so creative. Spanish food keeps surprising me.
Me too. This was an out of left field experience.
Bit weird but oh so yummy looking.
weird in a unique and very delicious way
I love icecream but I would have thought of teeming it up with a savoury like beef.
It actually works, and we were as surprised as you
Delicious…
It was
Paula, I’ve never heard of including ice cream in dishes such as these. It probably works well because of the coolness…I would love to try it.
I was very pleasantly surprised at how well it works, and savoury ice-creams are a favourite of mine.
